Cheesy Potatoes Recipe

Maybe this is a Midwest thing, but cheesy potatoes accompany almost all of the Buscher family gatherings. If you want something different than mashed potatoes this Thanksgiving, give these a try! If you need another veggie side, scroll down for a homemade cream corn recipe as well. (As with any Thanksgiving dish, please don’t count the calories.)


  • 2 lb. bag of shredded hash browns
  • 1 can cream of chicken soup
  • 1 can cream of celery soup
  • 16 oz. sour cream
  • 2 c. shredded cheddar cheese
  • 1/2 c. onion, finely diced
  • pepper and garlic salt to taste
  • 3 c. cornflakes, crushed
  • 1/2 c. butter, melted

Preheat oven to 350 degrees. Mix all ingredients except cornflakes and butter. Spread in greased 9×13 pan. Bake for 45 minutes. Combine cornflakes and butter and spread on top of potatoes. Bake for an additional 15 minutes.


  • 2 small packages frozen corn
  • 8 oz heavy whipping cream
  • 1 tsp. salt
  • 2 T. sugar
  • 2 T. butter, melted
  • 2 T. flour

Combine corn, cream, salt and sugar in a sauce pan over medium high heat. Bring to a boil. Reduce heat and simmer 5 minutes. Blend butter and flour, then add to corn. Mix well & serve.
